Cookin with Kata episode 2

Hey everyone, welcome back to Cookin with Kata. In episode 2 this week we’ll be doing a request from @WannabeFinn who asked for cookie recipes. Since Vilde’s specialty is baking that request was right up his alley. With so many different recipes to choose from it was difficult to determine which ones to include in this episode so we decided to go with the top 4 most requested ones from family and friends. Vilde was taught by his Grandmother how to bake and has been doing it since he was a young child. Now let me say something about cookies. Everyone has their own idea of what a cookie should be. Some people only like soft cookies, while others prefer crispy ones. Some like thin and some like some substance to them. Vilde is from the school of the soft cookies with a bit of substance to them. If there’s one thing that gets him pissed off it’s when his cookies come out flat and crispy. Over the years Vilde has determined that the best way to accomplish his goal of a soft cookie is to refrigerate the dough overnight and then bake them the next day. The cold dough doesn’t allow the cookie to spread as much so you get a “fluffier” cookie. He also doesn’t time them either, instead preferring to use the sight test. That method makes it easier for them to not overcook. Also, a silpat is very important in this process as well, they’re pretty much a must have for any serious baker. So without further ado here’s the first recipe of the episode.


The chocolate chip cookie, the world’s most popular. There are probably as many recipes for this cookie as Vilde allows pucks in the net this season. Everyone has their preferred one and this one of Vilde’s has been refined over time to get it to right where he wants it. It makes a nice thick soft cookie.

Chocolate Chip Cookies

2 ¾ cups Flour
1 tsp Baking Soda
1 tsp Salt
2 sticks Softened Unsalted Butter
¾ cup Sugar
¾ cup Brown Sugar
1 Tbsp Vanilla
2 Tbsp Milk
2 Eggs
2 cups Chocolate Chips


1. Preheat oven to 375 degrees.
2. Sift flour, soda and salt.
3. Cream butter, beat in sugars till
smooth. Beat in eggs one at a time.
Beat in vanilla and milk.
4. Beat in flour in 3 stages. Fold in
chips.
5. Chill 2-3 hours.
6. Drop by rounded teaspoons onto
cookie sheet and bake
for 9-11 minutes at 375 degrees.



They should look pretty close to this when they’re finished.

The next cookie on the list is an old school one, a favorite from years past. While this cookie is great any time of year it becomes especially popular at Christmas time. I am talking about the Snickerdoodle of course. Snickerdoodles use cream of tartar in the recipe. These cookies tend to come out flat and the tartar will make them have little cracks on the top when they’re close to being done and have a tangy taste to them. It’s very easy to overcook these so it’s very important to keep a close eye on them. The cinamonny goodness makes the whole house smell amazing when they’re baking and kids really seem to love these. There are quite a few recipes for this cookie as well and Vilde has baked many of those before settling on a recipe he found online. So we present now the Snickerdoodle.



Snickerdoodles

1/2 cup butter, softened
1/2 cup shortening
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons white sugar
2 teaspoons ground cinnamon


1. Preheat the oven to 400F.
2. Cream together the butter, shortening, and sugar. Add in the eggs and vanilla. Stir in the flour, cream of tartar, baking soda and salt.
3. Mix together the 2 tablespoons of sugar and 2 teaspoons of cinnamon in a small bowl. Roll the dough into tablespoon sized balls and roll in the cinnamon sugar mixture. Place on baking sheets, at least 2 inches apart.
4. Bake for 8-10 minutes, or until just set on the edges. Remove immediately from baking sheets to cool completely.

Next up we have a very simple cookie that’s also very elegant. The shortbread cookie. These are the one cookie that the dough does not get refrigerated. This is also a very versatile recipe where you can top it with just about anything you like. Half a maraschino cherry, thumbprint in it for jam, dried fruits, M&Ms, Hershey’s kisses after they come out and many more. They’re finished with a simple powdered sugar and milk glaze that you just spoon on at random. They look like you spent all day on these buttery goodies but they’re only 4 simple ingredients.

Shortbread

1 cup butter, softened
1 1⁄2 cups all-purpose flour
1⁄2 cup icing sugar or 1⁄2 cup powdered sugar
1 teaspoon vanilla extract


1      Preheat oven to 350 degrees F.
2 In a mixing bowl and using an electric mixer, combine butter, flour, icing sugar and vanilla extract; mix until mixture is a smooth consistency.
3 Prepare cookie sheets with parchment paper.
4 Spoon out dough onto parchment lined cookie sheets by teaspoonfuls or by tablespoons for larger cookies, spacing about 2 inches apart.
5 Cut maraschino cherries into quarters and place one piece in the middle of each cookie, alternating with red and green cherries.
6 Bake in preheated 350 F oven for 13 to 15 minutes or until bottom of cookies are lightly browned, DO NOT OVERBAKE.
7 Make glaze using 2 cups of powdered sugar and 3-4 Tbsp milk and drizzle over cooled cookies

And finally, we have a real decadent treat, A dark chocolate raspberry cookie. The ladies really go crazy over this one with the dark chocolate chips and the subtle hint of raspberry flavor. These are great for when you really want to make a treat for your significant other or give as a Valentine’s gift. Again, one of Vilde’s most popular cookies, this and the shortbread cookies are the two most requested of his cookie recipes.

Dark Chocolate Raspberry Chocolate Cookies

1 cup unsalted butter
1 cup white sugar
3/4 packed brown sugar
2 eggs
1 tsp vanilla
1 Tbsp raspberry extract
1/2 tsp salt
1 1/4 cups unsweetened cocoa powder
1 3/4 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
2 cups dark chocolate chips
2 cups turbinado or demerara sugar (for rolling)



1. Heat oven to 350 degrees.
2. In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Add the vanilla and raspberry extracts and then the eggs one at a time, beating well with each addition. Combine the salt, cocoa, flour, baking powder and baking soda and gradually stir into the creamed mixture. Fold in chocolate chips.
3. Shape dough into balls and roll in turbadino (or demerara) sugar. Place on a baking sheet and flatten cookies slightly with the bottom of a drinking glass.
4. Bake 8-10 minutes or until the cookies are puffy and the tops are cracked, but still soft. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
